When I cook my steak or am out and trust the establishment: Rare. When at a friend's house or out at a place I find even remotely dubious: medium-rare. Why? I do not particularly enjoy munching on shoe leather and my stomach does not agree with dry, chewy substances. I appreciate a good sear and so also avoid other methods like the plague, including simply not cooking it. I don't think I need to seriously explain with this in mind why I am against boiling a steak in a plastic bag.
